The recipe to prepare delicious croissants at home

Ingredients:
500 gr 0 flour
2 medium eggs
200 ml milk
50 gr butter
100 gr sugar
10 g salt
12 gr brewer's yeast
Orange and lemon peel
200 g of butter
Directions:
Insert the milk, eggs, sugar and yeast into the mixer. Mix and add orange and lemon peels, flour and finally butter and salt. Knead the dough and let it rise for 2 hours. Then put it in a tray and leave to cool in the fridge.
In the meantime, roll out the 200 g of butter and leave to rest in the fridge.
At this point, overlap the butter on the dough and start making the folds, then in the fridge for 30 minutes. Perform this step two more times (the last time leave the dough in the fridge for 1 hour).
At this point form the croissants and let them rise for 90 minutes.
Brush egg yolk and bake at 356°F (180°) for 25/30 minutes.
