Custard cream twisted brioche: perfect for breakfast!

They are just divine!

INGREDIENTS
200ml (0.82 cup) milk
100g (0.5 cup) sugar
7g dry yeast
400g (3.2 cups) flour (all purpose)
1/2 tsp salt
40g butter
1 egg
 
For the custard, we need:
2 egg yolks
40g (0.2 cup) sugar
25g starch
10g vanilla sugar
250ml (1.2 cup) milk
 
Almonds
 
METHOD
  1. Mix all ingredients and knead the dough. Let rise for 1 hour. Divide the dough into 40g portions. Form buns. Place on a baking sheet and let rise for 20 minutes.
  2. Mix all the ingredients for the cream and brew. Put the cream on the buns and brush with the egg and milk. Sprinkle with chopped almonds.
  3. Bake for 25 minutes at 180 ° C / 350 ° F.
