Ingredients:
shortcrust pastry:
300g flour
150g cold butter
150g sugar
1 egg and 1 egg yolk
1 pinch salt
5g baking powder
Lemon peel

Custard:
500g milk
4 egg yolks
120g sugar
45g cornstarch
Lemon peel
1 teaspoon vanilla extract

To decorate:
40g pine nuts
Powdered sugar to taste

Directions:

Shortcust pastry: mix the ingredients by starting to combine the dry ingredients and then adding the butter. Knead the dough until compact. Then cover with plastic wrap and let it rest in the refrigerator for 30 minutes.
Filling: beat eggs and sugar, then add cornstarch and two tablespoons of milk. In a saucepan pour the milk and cook with lemon zest. Shortly before boiling, remove the lemon zest and pour the previously prepared mixture. Stir until a thick cream is obtained, then add the vanilla extract.
Roll out the pastry and fill it, then cover and complete the whole by brushing the milk and adding the pine nuts. Bake at 180°C (350°F) for 40 minutes.
