Panzarotti Napoletani: A Unique, Easy-To-Make Italian Recipe

Ingredients for 15 panzarotti:
1kg potatoes
5/6 slices of salami
2 egg yolks
50g grated cheese
salt
black pepper
provolone
egg white
breadcrumbs
 
Boil the potatoes then mash them, add the two egg yolks, salami, cheese, a pinch of salt and a littleblack pepper, then mix with the help of your hands. Take some dough, shape it with your hands and make a groove, then place the provolone inside. Brush the panzarotto with the egg white and then coat it in breadcrumbs. Fry at about 180°C (360°F) and serve hot.
