320g (11 oz) spaghetti
400g (14 oz) peeled tomatoes
2 garlic cloves
Extra virgin olive oil (to taste)
Fine salt (to taste)
Fresh basil leaves
A pinch of baking soda (to reduce acidity)

Boil salted water for the spaghetti.
In a pan, sauté the whole garlic cloves with a drizzle of olive oil until golden.
Add the peeled tomatoes, crush them lightly with a fork, and cook for about 20 minutes over medium heat.
