How to make a creamy TOMATO SOUP!

INGREDIENTS
1,6kg of tomatoes (cherry tomatoes and regular tomatoes)
1 onion
Salt
Pepper
Extra virgin olive oil
250ml (1 cup) of vegetable broth
Croutons
METHOD
1. We cut the tomatoes into pieces. Also, slice the onion.
2. Arrange the tomatoes and onion on a baking tray covered with parchment paper. Season with salt, pepper, and olive oil. Bake at 180°C/360°F for 35 minutes.
3. Transfer the tomatoes and onion to the bowl, add the vegetable broth, and blend with an immersion blender until you obtain a creamy consistency.
4. Pour the tomato soup into the serving dish, add croutons on top, and drizzle with olive oil. Serve and enjoy.
