Almond Flour Cookies the traditional Italian recipe that is really easy to make! 🤩

INGREDIENTS
For about 40 cookies:
200g (2 cups) almond flour
100g (3/4 cup) all-purpose flour
120g (1/2 cup) sugar
1 egg
35g (2 1/2 tbsp) butter
15ml rum
1 tsp vanilla extract
1 tsp ground cinnamon
1 lemon (zest)

METHOD
1. Mix the almond flour, sugar, and all-purpose flour in a large bowl using a spoon.
2. Add the butter, cold, and cut into pieces.
3. Knead with your hands until you get a homogeneous crumbly mixture, without large lumps.
4. Add the vanilla extract, ground cinnamon, and grated lemon zest, and mix again with a spoon until the ingredients are combined.
5. Add the egg and rum, and continue kneading with your hands until you get a homogeneous mixture.
6. Finish kneading everything on the work surface.
7. Form a dough ball, wrap it in plastic wrap, and let it rest in the fridge for about 30 minutes.
8. Take the dough, and form balls weighing about 12 grams each.
9. Place the balls on a baking sheet, spaced apart.
10. Bake at 180°C (356°F) for about 15 minutes.
