BACI DI DAMA (Lady's Kisses): this version of the traditional Italian cookies is very amazing!

Baci di Dama is a traditional Italian cookies named for their resemblance to two lips kissing
 
INGREDIENTS
For dough:
110g (1/2 cup) of all-purpose flour
45g (1/2 cup) of parmesan
110g (1 cup) of almond flour
30ml (2 tbsp) of milk
a pinch of salt
90g (1/2 cup) of butter
 
For the filling:
1 pear
20g (1 1/2 tbsp) of butter
110g (1/2 cup) of ricotta
50g (1/2 cup) of parmesan
Pepper
METHOD
1. In a bowl add the flour, parmesan, almond flour, milk, salt, and butter and mix with the fingers. When dough starts to form knead it with your hands to obtain compact dough.
2. Take small portions of dough and form balls (about 30 balls). Transfer them to the baking tray covered with parchment paper. Bake at 180°C/360°F for 20 minutes.
3. Peel and cut the pear into small pieces and transfer to the pan. Add the butter and cook for a few minutes. Remove from the heat and let it cool.
4. Add the ricotta, parmesan, cooked pear, and pepper in a bowl and combine.
5. Once the baci di dama has cooled completely, fill them two at a time with the cream cheese and pears. Serve on a serving dish and enjoy.
