Sicialian panelle: the italian recipe with chickpea flour!

INGREDIENTS
500g (1 pound) chickpea flour;
6 cups water;
½ cup fresh parsley, chopped;
salt and pepper to taste;
vegetable oil for frying.
METHOD
- Sift chickpea flour into a large pot of cold water. Make sure to add flour in portions and whisk it in-between to make sure no lumps are forming.
- Cook the flour over medium heat while whisking constantly, still make sure to leave no lumps or as little lumps as possible.
- Season the mixture with salt and pepper, add chopped parsley.
- Pour the mixture into a lined cake pan and set aside in fridge for 4-5 hours, until fully set.
- When set, remove from the pan, cut into slices and fry in preheated vegetable oil until brown and crispy on both sides.
