ORANGE FRITTERS: super soft and fragrant!

INGREDIENTS (makes about 30 fritters)
2 eggs
280g all-purpose flour (2 1/4 cups)
80g sugar (1/3 cup + 1 tbsp)
A pinch of salt
1/2 tsp ground cinnamon
120ml orange juice (1/2 cup)
Zest of 1 orange
2 tsp baking powder
1 tsp vanilla extract
Granulated sugar, as needed
1 liter oil, for frying

METHOD
1. In a large bowl, add the eggs, sugar, grated orange zest, and orange juice.
2. Mix with a spoon until you obtain a smooth, homogeneous mixture.
3. Add the all-purpose flour, baking powder, salt, cinnamon, and vanilla extract, then mix until the batter is smooth and evenly combined.
4. Pour the oil into a saucepan and heat it.
5. Portion the batter using two spoons, scooping small amounts and carefully dropping them into the hot oil.
6. Fry for about 5 minutes, turning the fritters often.
7. Drain the fritters on paper towels to remove excess oil, then immediately coat them in granulated sugar.
