ENCHILADAS: the tasty Mexican dish to serve at a dinner with friends!

INGREDIENTS
Extra virgin olive oil
650g chicken breast
1 onion
3 green chili peppers
1 red chili pepper
520ml (2¼ cups) + 300ml (1¼ cups) tomato sauce
Salt
Pepper
210g (¾ cup) sour cream
Parsley
150g + 60g cheddar cheese
6 corn tortillas
METHOD
1. In a pan, heat some extra virgin olive oil and cook the chicken breasts for about 7 minutes per side. Remove from the heat and cut into pieces.
2. In the same pan, sauté the chopped onion until golden, then add the green and red chili peppers, 520 ml of tomato sauce, salt, and pepper. Cook over low heat for 15 minutes.
3. In a bowl, combine the sour cream with the cooked sauce using a spatula. Add the chicken pieces, chopped parsley, and 150 g of cheddar. Mix everything well and let the filling cool.
4. In a saucepan, heat a little olive oil and add the remaining 300 ml of tomato sauce and a pinch of salt. Simmer for a few minutes until slightly thickened.
5. Fill each tortilla with the chicken mixture, roll them up, and place them in a baking dish. Cover with the warm tomato sauce, then top with a few spoonfuls of sour cream and the remaining 60 g of cheddar.
6. Bake in a preheated oven at 180°C (360°F) for 20 minutes.
7. Serve the enchiladas hot and enjoy!
