Chocolate eclairs: the recipe for a delicious dessert everyone will love

Ingredients:
- For the chocolate filling:
250 ml of milk
3 egg yolks
60 g of sugar
25 g of corn starch
120 g of dark chocolate
- For the dough:
75 g of water
75 g of milk
55 g of butter
1 pinch of salt
1 tsp of honey
80 g of flour
2 big eggs or 3 small eggs
- For the icing:
70 g of cream
70 g of dark chocolate
20 g of butter
Directions:
1. Make the filling by whisking eggs with sugar, then add corn starch and warm milk.
2. Now heat this mixture in a saucepan and stir until it thickens.
3. Add finely chopped dark chocolate, dissolve and let cool.
4. Dough: mix water, milk, butter and salt in a saucepan. Bring to a boil and add honey.
5. Stir in flour and cook and stir continuously until it's completely absorbed.
6. Let cool a bit and stir in the eggs one at a time.
7. Shape the eclairs using a piping bag, then bake at 180° for 35 minutes.
8. Stuff with chocolate custard from before.
9. For the icing: melt chocolate in warm cream and use it to decorate.
