Coffee roll: the recipe for a delicious dessert everyone will love

Ingredients: 
 
- For the coffee filling: 
2 egg yolks 
50 g of sugar
1/2 tbsp of flour 
1 tbsp of corn starch
150 ml of strong coffee
170 g of butter (room temperature) 
 
- For the sponge cake: 
60 g of flour 
20 g of cocoa powder
3 eggs 
1 pinch of salt 
70 g of sugar
10 g of vanilla sugar
 
- For the brittle: 
65 g of assorted nuts (walnuts and hazelnuts) 
5 g of butter
30 g of sugar
 
- For the syrup: 
50 ml of coffe + sugar and milk 
 
- For the icing: 
50 g of chocolate 
10 g of vegetable oil 
 
Directions: 
1. Filling: whisk eggs and sugar in a saucepan. Then add coffee, flour and corn starch. 
2. Cook on the stove and stir continuously until it thickens. 
3. Cover with some plastic wrap and let cool. 
4. Sponge cake: whisk eggs with salt, sugar and vanilla sugar. Then add sifted flour and cocoa powder. 
5. Pour the batter into a tray coated with baking paper and flatten. 
6. Bake in a pre-heated oven at 190° for 10 minutes. Then refine the cake's edges and let cool. 
7. Brittle: pour butter, sugar and roughly chopped nuts in a pan. Cook until the sugar is completely dissolved. 
8. Let cool on a baking paper sheet. 
9. Whip the butter and mix with the coffee pudding you made before. 
10. Wet the cake with syrup and fill with coffee mixture, then add brittle and roll. 
11. Refrigerate for 1 hour. 
12. Decorate with chocolate icing, coffee cream and more brittle.
