Fluffy lemon custard cake: the recipe for an easy and delicious dessert

Ingredients:
- For the lemon custard:
4 tsp of grated lemon zest
135 g of lemon juice
3 eggs
190 g of sugar
10 g of corn starch
- For the batter:
290 g of eggs
220 g of sugar
350 g of flour
10 g of baking powder
220 g of melted butter
2 tsp of grated lemon zest
- For decoration:
Powdered sugar
Directions:
1. In a bowl mix lemon juice and grated lemon zest.
2. Also add eggs, sugar and starch. Stir well.
3. Cook at low heat stirring continuously until it thickens.
4. Sift the custard, cover with some plastic wrap and let cool.
5. For the batter whisk eggs and sugar.
6. Aside mix flour and baking powder, sift them and stir them gradually into the batter.
7. Add melted butter and grated lemon zest.
8. Assemble the cake alternating batter layers and lemon custard layers into a rectangular cake mold.
9. Bake in a pre-heated oven at 170° for 60 minutes.
10. Decorate with powdered sugar and serve.
