Homemade croissants: the recipe to make them soft and delicious

Ingredients:
- For the dough:
430 g of flour
175 ml of warm milk
150 g of butter
1 egg
10 g of salt
Flavorings (vanillin, lemon or orange zest)
- For the pre-dough:
85 g of sugar
100 g of flour
18 g of fresh brewer's yeast
175 ml of warm milk
Directions:
1. Pre-dough: mix sugar, yeast, warm milk and flour. Blend well and let rest for 30 minutes.
2. Dough: add milk to the pre-dough, then mix egg, flour, butter and salt.
3. Make an even dough and let rest for 2 hours.
4. Then shape the croissants and let them rest for 90 minutes.
5. Brush their surface with whisked eggs.
6. Bake at 180° for 15-20 minutes.
