Baked chorizo pasta: the recipe for a simple and savory pasta dish

Ingredients:
200 g of pasta
100 g of chorizo
1 garlic clove
Half an onion
1 small leek
1 piece of red bell pepper
500 g of canned tomatoes
100 ml of white wine
Dried oregano
Salt and pepper
Olive oil
Grated cheese
Directions:
1. In a large pan fry some oil with chopped garlic and onion.
2. Also add diced bell pepper and leek.
3. Cook everything for a couple of minutes at high heat.
4. When the vegetables start browning add tomatoes, then season with salt and pepper.
5. Pour in white wine and let it evaporate.
6. Once all the liquids are completely absorbed, blend the mixture with some pasta cooking water.
7. In the same pan from before fry chorizo for a couple of minutes, then add the sauce from before and season with some dried oregano.
8. When it's done, drain pasta and mix it with the sauce.
9. Pour it onto a baking tray and coat with some grated cheese.
10. Bake in the upper part of the oven at 180° until the cheese on top melts and becomes crispy.
