Barbie pasta: the recipe for a special and extra pink pasta!

INGREDIENTS
2 beets
300g of soft cheese
2 beets
300g of soft cheese
METHOD
1. Bake the beets in the oven for 30 minutes at 200°.
2. Gently remove the peel and cut them into chunks.
3. Meanwhile, cook the pasta.
3. In a blender, add the beets, the soft cheese and a little cooking water. Blend until you get a very creamy and homogeneous mixture. Add salt and a little extra virgin olive oil to your liking.
4. Season the pasta and serve. You can also decorate it with more soft cheese and basil leaves!
