Veggie stuffed eggplants: the recipe for a savory and light dish

Ingredients:
3 eggplants
Vegetable oil
1 onion
Olive oil
Salt
1 carrot
Chili pepper
2 red bell peppers
3 tomatoes
350 g of champignon mushrooms
Fresh parsley
3 tbsp of grated cheese
Directions:
1. Peel the eggplants top and place them in a tray with baking paper on the bottom.
2. Brush with some vegetable oil.
3. Bake in a pre-heated oven at 200° for 15 minutes.
4. Finely chop the onion and stir fry it in a pan with some oil and a pinch of salt.
5. Grate the carrots and add them to the pan.
6. Also add chili pepper and diced bell pepper.
7. Lastly mix in chopped tomatoes and mushrooms.
8. Season with some chopped fresh parsley.
9. Cut the eggplants lengthwise and fill them with the vegetables from the pan.
10. Add grated cheese.
11. Bake for another 10 minutes.
