How to make cassata: the creamy and delicious Italian dessert

Ingredients:
MARZIPAN:
250g marzipan
green gel food coloring
SPONGE CAKE:
3 eggs
90g flour
90g sugar
MARSALA SYRUP:
30g water
20g sugar
15g marsala
RICOTTA CREAM:
500g sheep ricotta
130g chocolate chips
130g powdered sugar
DARK GLAZE:
200g powdered sugar
28g water
 
Directions:
1. Sponge cake: mix the eggs with the sugar by placing the bowl in a pan of hot water. Then sift and add the flour.
Pour the mixture into a mold and bake at 190 ° for 18 minutes.
2. Ricotta cream: sift the ricotta and add the icing sugar, then add the chocolate chips. Store in the fridge.
3. Mix the marzipan with the food coloring.
4. Assemble the cassata and leave in the fridge overnight.
5. Icing: mix the icing sugar with the hot water. Cover the cake and leave in the fridge for an hour.
