Vanilla and chocolate éclair: the recipe for a delicious dessert

Ingredients:
Pastry cream:
3 yolks
20g rice starch
50g sugar
250ml milk
100g cream
1 vanilla bean
Choux pastry:
130ml water
50g butter
1 pinch of salt
70g "00" flour
2 eggs
Ganache Chocolate:
60g dark chocolate
60g cream
 
Directions:
1. Custard: mix the egg yolks with the sugar and starch. Heat the milk, cream and vanilla. Then add the two compounds and let it thicken on the fire.
2. Choux pastry: melt the butter in water and salt. Then add the flour and stir until it comes off the sides of the pot. Then integrate the eggs.
3. Form the éclairs and bake at 190 ° for 25 minutes.
4. Fill the éclairs with the cream and decorate with the ganache.
