200g blackberries
90g sugar
10g lemon juice
PANNA COTTA WITH POMEGRANATE:
130ml milk
130ml cream
70g sugar
125g pomegranate juice
5g gelatin in sheets

Preparation:
1. Shortcrust pastry: mix the butter with sugar and salt. Then add the egg and the flour. Form a homogeneous dough and leave it in the fridge for 30 minutes.
2. Then roll out the pastry and insert it into the mold. Refrigerate another 30 minutes and then bake at 160 degrees for 35 minutes. Then brush a beaten egg inside and bake at 140 ° for 5 minutes.
3. Put the blackberries in a saucepan and cook with sugar and lemon juice. Blend the mixture and let it rest in the fridge for 2 hours.
4. Heat the cream with the sugar, then add the gelatin and pomegranate juice. Add some food coloring and leave in the fridge for 30 minutes.
5. Assemble the cake and leave in the fridge for 4 hours before serving.
