Potato crepes: a super idea for a quick dinner!

Just pour the eggs over the potatoes and the result will leave you speechless!
INGREDIENTS
3 eggs;
300 g (2 large) potatoes, peeled and chopped;
300 ml (1 ¼ cup) milk;
a pinch of salt;
30 ml (2 tbsp) vegetable oil;
130 g (1 cup) all-purpose flour;
Ham and cheese.
METHOD
- Blend potatoes with eggs and milk, oil until smooth. Season with salt and whisk in flour.
- Make crepes by frying batches of batter on a preheated non-stick pan for 2-3 minutes per side.
- Wrap cheese and ham in each crepe and bake for 5 minutes at 180C/350F.
