Potato baskets with bell pepper: the quick recipe for a perfect lunch

Ingredients:
800 gr potatoes
Salt
300 gr onion
Olive oil
1 red bell pepper
3 tomatoes
Black pepper
Oregano
Parsley
50 gr parmesan cheese
Directions:
1. Cut and boil the potatoes into salty water.
2. Chop onion, bell pepper and tomatoes.
3. In a pan fry the onion and then add tomatoes and bell pepper.
4. Add salt, black pepper and cook all for about 15 minutes.
5. Smash the potatoes and add parsley, parmesan cheese and 2 tbsp of flour.
6. Make the basket and bake at 400°F (200°) for 20 minutes.
