Tiramisu plumcake: two desserts in one recipe!

INGREDIENTS
INGREDIENTS
Cake:
100g (1/4 cup + 3 tbsp) butter;
140g (1 cup) dark chocolate;
3 tbsp cocoa powder;
(115g) 1/2 cup sugar;
3 eggs;
3 tbsp flour.
Cream:
3 gelatine leaves, soaked;
3 tbsp hot water;
100ml (1/3 cup + 2 tbsp) full-fat cream;
300g (1 1/3 cup) mascarpone;
1 tsp vanilla sugar;
60g (1/2 cup) powdered sugar.
Milk:
240ml (1 cup) milk;
2 tbsp instant coffee;
ladyfinger biscuits.
METHOD
- Preheat oven to 180C/350F. Cover plum cake baking pan with parchment paper.
- Melt butter and dark chocolate in microwave, add cocoa, sugar, egg yolks and flour. Mix to combine.
- Beat egg whites until stiff peaks form. Fold egg white foam into the batter.
- Pour the batter into prepared pan and bake for 35 minutes. Leave to cool down completely.
- Dissolve soaked gelatine leaves in hot water.
- Beat cream, mascarpone, vanilla and powdered sugar with gelatine until stiff.
- Whisk milk and coffee.
- Spread half of the mascarpone cream on top of the cool cake. Dip ladyfingers in coffee milk and layer on top of the cream. Repeat the this two layers once more.
- Chill tiramisu for 3 hours, then sprinkle with cocoa and slice before serving.
