Fried stuffed donuts: the recipe to make them fluffy and tasty

An Italian recipe to prepare delicious donuts.
Ingredients:
300 gr 00 flour
200 gr Manitoba flour
25 gr brewer's yeast
1 pinch of salt
90 gr soft butter
100 gr milk
120 gr sugar
Vanillin
Stuffed:
100 gr custard
100 gr chocolate cream
Fry oil
sugar
Directions:
Dough: mix the two flours and also mix water and milk.
Then dissolve the yeast with 80 g of water and milk and 3 tablespoons of flour. Let stand 15 minutes.
Then mix the remaining amount of flour with the remaining sugar, vanillin, pre-dough, milk and water. Let rise for 2 hours.
Then roll out the dough and form the staples by stuffing them.
Let stand for 30 minutes and fry in hot oil.
