Vegetables flatbread: the recipe for a light and tasty meal

Ingredients:
300 g of broccoli
1 onion
1 carrot
1 bell pepper
200 g of mushrooms
3 potatoes
200 g of mozzarella
Salt and pepper
Olive oil
3 eggs
200 ml of milk
200 g of corn flour
Coriander
Directions:
1. Cut broccoli and soak in hot water for 10 minutes.
2. Fry chopped onion, grated carrot, diced bell pepper and sliced mushrooms in pan with some olive oil.
3. Season with salt and pepper.
4. Whisk eggs and milk in a bowl, then add corn flour and shredded broccoli.
5. Lastly add grated potatoes, the vegetables from the pan and grated mozzarella cheese.
6. Season with salt and chopped coriander.
7. Place the mixture in a tray coated with a greased baking paper sheet.
8. Bake at 180° for 20 minutes.
9. Top with some more mozzarella and continue baking for 10 minutes.
