Vegetable lasagna: the result will surprise you!

Easy to male and so delicious, everyone will love it!

INGREDIENTS

2 eggplants, sliced;

1 tomato, sliced;

2 carrots, sliced;

200 g (7 oz) cheese, shredded;

200 g (7 oz) tomato sauce;

1 tbsp dried basil;

2 tbsp butter;

1 ½ cup milk;

3 tbsp flour;

salt, pepper, nutmeg.

METHOD

Heat some vegetable oil and use it to cook carrot and eggplant slices until golden.
Melt butter and cook the flour in it for around 30 seconds. Start gradually add milk, while whisking constantly. Cook down until thick, then season with salt, pepper and nutmeg.
Layer a bottom of a baking pan with eggplant slices, top with tomato, some dried basil and tomato sauce. Add another layer of eggplant, then white sauce, carrots, cheese, eggplant, tomato sauce and more cheese.
Bake for 30-35 minutes at 180C/350F.
