Vegetable lasagna: the result will surprise you!

Easy to male and so delicious, everyone will love it!
INGREDIENTS
2 eggplants, sliced;
1 tomato, sliced;
2 carrots, sliced;
200 g (7 oz) cheese, shredded;
200 g (7 oz) tomato sauce;
1 tbsp dried basil;
2 tbsp butter;
1 ½ cup milk;
3 tbsp flour;
salt, pepper, nutmeg.
METHOD
- Heat some vegetable oil and use it to cook carrot and eggplant slices until golden.
- Melt butter and cook the flour in it for around 30 seconds. Start gradually add milk, while whisking constantly. Cook down until thick, then season with salt, pepper and nutmeg.
- Layer a bottom of a baking pan with eggplant slices, top with tomato, some dried basil and tomato sauce. Add another layer of eggplant, then white sauce, carrots, cheese, eggplant, tomato sauce and more cheese.
- Bake for 30-35 minutes at 180C/350F.
