VEGAN MUFFINS: truly delicious without the use of eggs and butter!

INGREDIENTS
340ml (1 1/2 cups) vegetable milk
110ml (1/2 cup) vegetable oil
Vanilla extract
340g (2 3/4 cups) all-purpose flour
40g (1/3 cup) cocoa powder
210g (1 cup) sugar
A pinch of salt
12g (3/4 tbsp) baking powder
60g chocolate (melted)
For topping:
Dark chocolate
Dark chocolate chips
METHOD
1. In a bowl, add the vegetable milk, vegetable oil and vanilla extract. Whisk until smooth.
2. In a mixing bowl, combine the all-purpose flour, cocoa powder, sugar, salt and baking powder. Mix well.
3. Pour the wet ingredients into the dry ingredients. Add the melted chocolate and mix until you obtain a smooth batter.
4. Place the paper liners in a muffin tray and fill them with the batter using an ice cream scoop.
5. Top with pieces of dark chocolate and dark chocolate chips. Bake at 180°C/360°F for about 30 minutes.
6. Transfer the muffins to a serving dish and enjoy.
