YOUTIAO: the crispy and light Japanese fried bread!

INGREDIENTS
310g (2 1/2 cups) all-purpose flour
12g (3/4 tbsp) baking powder
2g (1/2 tsp) baking soda
6g (1 tsp) salt
230ml (1 cup) milk
20ml (1 1/2 tbsp) vegetable oil
Oil for frying
METHOD
1. In a bowl, sift the all-purpose flour, baking powder and baking soda. Add the salt, milk and vegetable oil.
2. Mix with a spatula and, when the dough starts forming, knead it with your hands until a smooth dough forms. Cover with cling film and set aside for 30 minutes.
3. After the resting time, transfer the dough to a work surface and divide it in half. Roll each half out on a floured surface.
4. Lightly brush both sides with vegetable oil. Cover with cling film and let rest for 30 minutes.
5. After 30 minutes, cut into strips about 3cm wide. Stack two strips and gently press the center with a chopstick.
6. Transfer them to a pot with hot oil and fry on both sides until golden brown and puffed.
7. Serve the youtiao on a serving dish and enjoy.
