BREAD PUDDING: How to reuse stale bread in a delicious way!

INGREDIENTS
320g stale bread
3 eggs
1l (4 cups) milk
260g (1 1/4 cups) sugar
Zest of 1 lemon
For the caramel:
100ml (1/2 cup) water
190g (1 cup) sugar
METHOD
1. Cut the stale bread into cubes. Place it in a blender, then add the eggs, milk, sugar and lemon zest. Blend until combined.
2. In a pan, combine the water and sugar to make the caramel. Cook over medium heat until golden amber in color.
3. Pour the caramel into a 24cm mold. Pour the mixture over it and transfer the mold to a larger tray.
4. Add boiling water to the tray, filling it halfway up the sides of the mold (bain-marie). Transfer to the oven and bake at 160°C/320°F for 90 minutes.
5. Let it cool completely after baking, then invert it onto a plate. Slice and serve.
