CORN FLOUR COOKIES: fragrant and really simple to make!

INGREDIENTS
210g butter
180g (1 1/2 cups) powdered sugar
2 egg yolks
1 egg
Vanilla essence
210g (1 3/4 cups) all-purpose flour
A pinch of salt
210g (1 3/4 cups) corn flour
 
METHOD
1. In a bowl, add the butter and powdered sugar. Mix with an electric mixer until creamy and pale.
2. Add the egg yolks, egg and vanilla essence. Mix until fully incorporated and smooth.
3. Add the all-purpose flour, salt and corn flour. Mix with a spatula until a dough forms. Cover with cling film and transfer to the fridge for 30 minutes.
4. After the resting time, transfer the dough to a work surface and roll it out to 5mm thickness. Cut the cookies with a cookie cutter.
5. Transfer the cookies to a lined baking tray. Bake at 180°C/360°F for 12 minutes, until golden.
6. Serve the cookies on a serving dish and enjoy.
