POTATO PIZZAS: You'll make a great impression at the table with this quick and delicious recipe!

INGREDIENTS
6 potatoes
80g (1/3 cup) tomato sauce
Dried oregano
Extra virgin olive oil
Salt
110g mozzarella
 
METHOD
1. Place the potatoes in a large pot and boil for about 25 minutes, until tender. Let them cool slightly, then peel them.
2. In a small bowl, prepare the sauce by mixing the tomato sauce with dried oregano, extra virgin olive oil, and salt.
3. Place the whole potatoes on a baking sheet lined with parchment paper. Lightly crush each potato with a glass or a fork, then season with salt.
4. Spoon some of the prepared tomato sauce over each potato. Bake at 200°C/400°F for about 25 minutes.
5. Remove from the oven, add the mozzarella to each potato, and bake for another 5 minutes, until melted.
6. Garnish with more dried oregano and fresh basil. Serve and enjoy.
