SPINACH-STUFFED EGGS: for a mouth-watering buffet!

INGREDIENTS
6 eggs
Extra virgin olive oil
1 garlic clove
210g spinach
Salt
50g (1/4 cup) mayonnaise
35g Parmesan cheese
Pepper
 
METHOD
1. Place the eggs in boiling water and cook for 9 minutes. Peel the eggs and cut them in half lengthwise. Remove the yolks.
2. In a pan, heat the extra virgin olive oil with the garlic clove. Add the spinach, season with salt, and cook for 2–3 minutes, then remove from the heat.
3. In a bowl, combine the egg yolks, mayonnaise, spinach, Parmesan, and pepper. Mix well with a fork, then transfer the mixture to a piping bag.
4. Pipe the mixture into the egg whites. Serve and enjoy.
