Baked potato wedges with speck are perfect as a side dish!

INGREDIENTS
4 potatoes
210 g of speck
Extra virgin olive oil
Thyme
 
METHOD
1. Place the potatoes in a pot with water and bring to a boil. Boil for 30 minutes, then remove from heat. Let the potatoes cool.
2. Peel the potatoes and cut them into wedges. Wrap each potato wedge in a slice of speck.
3. Pour olive oil into a pan and add a few sprigs of thyme. Place the potato wedges wrapped in speck into the pan and cook for a few minutes on each side until golden brown.
4. Serve the potato wedges with speck on a serving dish and enjoy.
