If you’re looking for a fun new way to serve up potatoes, this recipe is for you. With herbs, olive oil, cheese, and garlic, these Crispy Accordion potatoes are delicious enough to serve on their own, or as a moreish side to any main dish! And making it is no hassle. Simply cut slices into the potatoes, brush with olive oil and herbs, and stuff with cheese. Once baked, you’re left with golden, crispy potatoes with a fluffy center. For these yummy spuds, there is no need to wait for a special occasion, make them for your next midweek meal and indulge in some serious comfort food.

What Are Accordion Potatoes?

Accordion Potatoes (also called Hasselback Potatoes) are easy to make but result in an impressive dish. The dish originated in the Hasselbacken Restaurant (hence the name!) in Stockholm, Sweden, and has become very popular in other countries in recent years,

To make it, potatoes are sliced in such a way that it resembles an ‘accordion’. This gives the potato a greater surface area, which means more crispiness! To make the cuts easier, wooden skewers or two wooden spoons are placed next to each potato to prevent it from moving around, as well as helping you to make equally sized cuts.

Tips

– There is no need to peel the potatoes first—they taste better with the skin on. Just make sure to wash the potatoes with a vegetable brush before use to remove any dirt.

– To see if the potatoes are cooked though, use a sharp knife or skewer before removing them from the oven.

– Use either salted or unsalted butter. Adjust seasoning accordingly.

– Any potato variety will work for this recipe, but Yukon potatoes are the best potatoes for roasting. They’re waxy enough to ensure they hold their shape while roasting, but also starchy enough to become silky and smooth inside.

– You can also modify the recipe to add other flavors. Instead of cheese, tuck knobs of flavored butter in between the potato slices. And experiment with different seasonings too!

Thyme
1 g (1 tsp)

How to make Accordion Potatoes

Preheat the oven to 180°C/360°F. Set the potatoes on a cutting board and place two kitchen tools on each side of the potato. With a sharp knife, make deep vertical cuts, but without cutting all the way through the potato.

In a small bowl, combine 2 tbsp of olive oil with a pinch of salt.

Place potatoes with the cut side up in the baking dish. Brush with the olive oil mixture.

Bake for 25 minutes.

Place the garlic cloves on the cutting board, add rosemary and thyme, and chop until fine.

Place this mixture into a small bowl, add 3 tbsp of olive oil, season with salt and pepper, and mix well. Brush the herbs over the potatoes, making sure each potato is a bit of a mixture.

Place a cheese square into each potato cut.

Bake for another 20 minutes.

How To Store Accordion Potatoes

The accordion potatoes are best served while crispy. Leftovers can be stored in the fridge (in an airtight container) for up to 5 days. To reheat, warm in the oven at 425°F until warmed through.
