SAVORY PUMPKIN MUFFINS WITH CHEESE CENTER: delicious and stringy!

INGREDIENTS
260g pumpkin
2 eggs
90ml (1/3 cup) vegetable oil
70g (3/4 cup) Parmesan
280g (2 1/4 cups) all-purpose flour
16g (1 tbsp) baking powder
40ml (3 tbsp) milk
110g cheese
Pumpkin seeds
METHOD
1. Cut the pumpkin into cubes. Bake at 180°C/360°F for 20 minutes, until soft. Blend into a puree and transfer to a bowl.
2. In the bowl with the pumpkin puree, add the eggs, vegetable oil and milk. Whisk until smooth and well combined.
3. Add the Parmesan, all-purpose flour and baking powder. Mix until a batter forms.
4. Line a muffin pan with paper liners. Fill each cup halfway with batter and place a cube of cheese in the center.
5. Cover with more batter and sprinkle pumpkin seeds on top. Bake at 180°C/360°F for 20 minutes, until golden.
6. Serve the pumpkin muffins on a serving dish and enjoy.
