Crumbed pumpkin: a delicious way to bake pumpkin!

Trust us, once you've tried this jazzed-up version there's no going back.
 
INGREDIENTS
500g of Pumpkin
150g (1 1/4 cups) of Breadcrumbs
30g (2 tbsp) of Parmesan cheese
Garlic
Rosemary
Pepper
Extra virgin olive oil
Salt

METHOD
  1. First, cut the pumpkin into small pieces.
  2. Add breadcrumbs, parmesan, garlic, rosemary, pepper to the bowl and mix well.
  3. In another bowl, add the pumpkin pieces, sprinkle with oil, and season with salt. Add the breadcrumbs mixture and mix everything well.
  4. Transfer the pumpkin mixture to a baking tray covered with baking paper, grease it with oil, and spread the mixture evenly. Add a sprig of rosemary, garlic and sprinkle with olive oil.
  5. Bake in the oven at 240°C/464°F for 20 minutes and garnish with rosemary.
