Pumpkin quiche

Ingredients1 pumpkin
3 eggs
3 tbsp sour cream
200 g pancetta
1 small onion
150 g mozzarella
2 tbsp olive oil
1 tsp fresh parsley
Salt and pepper to taste
Method
Cut pumpkin in half and remove seeds.
Coat pumpkin with olive oil and bake for 10 minutes on 200 degrees.
Remove part of the pumpkin flash to make hole for stuffing.
Fry pancetta and onion in a pan.
In mixing bawl combine eggs, sour cream, fried pancetta, salt, pepper and pumpkin puree.
Pour the sauce in pumpkin and cover with mozzarella.
Bake in the oven for 30 minutes on 180 degrees.
Serve with fresh parsley and enjoy!
