INGREDIENTS

For muffins batter:

2 eggs

170g (3/4 cup) of sugar

Vanilla extract
Cinnamon

150g (3/4 cup) of butter (melted)

270g of pumpkin puree

310g (2 1/2 cups) of flour

10g (3/4 tbsp) of baking powder

40g (1/2 cup) of almond flour

40g of almond

For the frosting:

310g (1 1/2 cups) of cream cheese

130g (1 cup) of powdered sugar

60g of pumpkin puree

Cinnamon

Vanilla extract

METHOD

1. Peel and slice the pumpkin and transfer to the pan covered with parchment paper. Cover with kitchen foil and bake in the oven at 180°C/360°F for 35 minutes.

2. Transfer the baked pumpkin to the bowl and puree it with the hand blender.

3. In a mixing bowl add the eggs, sugar, vanilla essence, cinnamon, butter (melted), pumpkin puree, flour, and baking powder and mix with an electric mixer. Finally, add the almond flour and chopped almonds and incorporate with a spatula. Fill the piping bag with the mixture.

4. Place the paper cups in the muffin mold and fill each cup with the prepared mixture.

5. Transfer the muffin mold to the oven and bake at 180°C/360°F for 25 minutes.

6. In a bowl add the cream cheese, powdered sugar, pumpkin puree, cinnamon, and vanilla essence and mix with the electric mixer.

7. Decorate the muffins with the prepared frosting and serve on a serving plate.
