HAM AND CHEESE MUFFINS: quick and delicious!

INGREDIENTS
2 eggs
120ml (1/2 cup) milk
50ml (1/4 cup) vegetable oil
210g (1 3/4 cups) all-purpose flour
10g (3/4 tbsp) baking powder
5g salt
20g (1/4 cup) Parmesan
110g scamorza cheese
100g cooked ham
 
METHOD
1. In a bowl, add the eggs, milk and peanut oil. Beat with a fork until well combined and smooth.
2. Add the flour, baking powder, salt and Parmesan. Whisk to combine.
3. Pour the wet ingredients into the dry ingredients. Mix gently with a spoon just until combined.
4. Add the cheese cubes and ham cubes to the batter. Fold in carefully until evenly distributed.
5. Place the paper liners in the muffin tray. Fill each mold 3/4 full with batter, leaving space to rise. Bake at 180°C/360°F for 25 minutes.
6. Serve the muffins on a serving dish and enjoy.
