STRAWBERRY CREAM: perfect as a dessert or to fill your desserts!

INGREDIENTS
250g strawberries, cut into pieces
70g brown sugar
50g potato starch
220ml milk
a few mint leaves, for garnish
METHOD
1. Place the chopped strawberries, brown sugar, potato starch, and milk in a tall container.
2. Blend everything with an immersion blender until you obtain a smooth and even liquid.
3. Pour the mixture into a saucepan.
4. Place over medium heat and cook, stirring continuously. When the cream thickens and becomes smooth, it is ready.
5. Remove from the heat, cover with plastic wrap directly touching the surface, and let it cool.
6. Serve in a bowl and garnish with a few mint leaves.
