STRAWBERRY MUFFINS: super soft and fragrant!

INGREDIENTS
260g strawberries
3 eggs
150g (3/4 cup) sugar
160g (1 1/2 cups) all-purpose flour
8g (1/2 tbsp) baking powder
Vanilla extract
70g sour cream
For decoration:
Powdered sugar
METHOD
1. Slice the strawberries into small pieces.
2. In a large bowl, whisk the eggs and sugar until pale and fluffy.
3. Sift in the all-purpose flour and baking powder, then mix gently. Stir in the vanilla extract and sour cream until the batter is smooth.
4. Line a muffin tin with paper cups and fill them with the batter. Arrange the strawberry pieces on top.
5. Transfer the muffin tin to the oven and bake at 180°C/360°F for 30 minutes.
6. Let the muffins cool, then dust with powdered sugar before serving.
