FUDGE CAKE: the recipe for the delicious chocolate cake!

INGREDIENTS
For the filling:
210g butter
460g dark chocolate
A pinch of salt
Vanilla extract
160g (1 1/4 cups) powdered sugar
360ml (1 1/2 cups) heavy cream
 
For the cocoa sponge cake:
80g (2/3 cup) cocoa powder
3g instant coffee
130ml (1/2 cup) hot water
190g (1 cup) sugar
190g (1 cup) light brown sugar
160ml (3/4 cup) vegetable oil
190g butter, softened
6 eggs
190ml (3/4 cup) buttermilk
310g (2 1/2 cups) all-purpose flour
9g baking soda
15g (1 tbsp) white vinegar
 
METHOD
1. In a saucepan, combine the butter, dark chocolate, salt, vanilla extract, powdered sugar, and heavy cream.
2. Place over medium heat and stir until the chocolate and butter are fully melted and the mixture is smooth.
3. In a large bowl, whisk together the cocoa powder, instant coffee, and hot water. Set aside to cool.
4. Add the sugar, light brown sugar, vegetable oil, and softened butter to the cocoa mixture and mix well.
5. Add the eggs and buttermilk and mix until well combined. Stir in the all-purpose flour until the batter is smooth.
6. In a small bowl, combine the baking soda and white vinegar, then quickly fold the bubbling mixture into the batter.
7. Pour the batter into a 20 cm cake pan and bake at 180°C/360°F for 35 minutes. Let the cake cool completely before assembling.
8. Spread the prepared fudge frosting between the cake layers and over the entire cake.
9. Slice and enjoy!
