ZUCCHINI AND ONION FRITTATA: a flavorful and easy-to-make version!

INGREDIENTS
420g onions
620g zucchini
Extra virgin olive oil
6 eggs
50g (1/2 cup) Parmesan cheese
Salt
Pepper
METHOD
1. Slice the onions and zucchini into thin rounds.
2. Heat some extra virgin olive oil in a pan, add the onions, and sauté until tender.
3. Add the zucchini to the pan and cook with the onions until golden and soft. Set aside and let cool.
4. In a separate bowl, whisk the eggs with Parmesan cheese, salt, and pepper.
5. Pour the egg mixture into the pan, ensuring the vegetables are evenly distributed. Cover and cook for 8 minutes over low heat.
6. Carefully flip the frittata using a plate and cook for another 3 minutes on the other side, until golden.
7. Slide the frittata onto a serving plate and serve.
