CANDIED LEMON PEELS: A sweet, citrus-scented snack!

INGREDIENTS
210g lemon peel
210g (1 cup) sugar
210ml (3/4 cup) water
Extra sugar, for coating
METHOD
1. Slice the lemon peel into strips and place them in a pot of water.
2. Bring to a boil and cook for 10 minutes, then drain. Repeat this process two more times, boiling in fresh water for 10 minutes each time.
3. In a large pan, combine the sugar and water. Add the blanched lemon peels and cook for about 20 minutes, until the syrup thickens and the peels become translucent.
4. Transfer the peels to a wire rack or parchment paper and let them dry completely.
5. Toss the dried lemon peels in sugar until fully coated. Serve and enjoy!
