Candied watermelon: the exquisite trick to recycle watermelon peel!

INGREDIENTS
For the cooking:
Watermelon
400ml (1 2/3 cups) of Water

For the caramelizing:
400g (2 cups) of Sugar
400ml (1 2/3 cups) of Water
1 Lemon
10 Cloves
 
METHOD
  1. Cut the watermelon into pieces and remove the middle and the rind parts of the watermelon and cut into pieces.
  2. Add the pieces to the pot and add the water. Cook covered for 40 minutes, stirring occasionally.
  3. Strain the watermelon pieces and set them aside.
  4. Add sugar and water to the pot and cook for 3-4 minutes until the sugar has dissolved. Add lemon juice and pieces of watermelon. Cook for another 30 minutes to caramelize.
  5. Add the cloves at the end and cook for 30 minutes more. Let it cool completely before serve.
  6. Store the candied watermelon in the jar.
