KEFIR COOKIES: super soft and fragrant!

INGREDIENTS (about 30 cookies)
200g (1 2/3 cups) all-purpose flour
30g (1/4 cup) bread flour
1 egg yolk
100ml (1/2 cup) kefir
70g (1/3 cup) sugar
40ml (3 tbsp) vegetable oil
1 tsp baking powder
Powdered sugar, as needed
METHOD
1. In a large bowl, add the kefir, sugar, vegetable oil and egg yolk.
2. Mix with a spoon until you obtain a smooth liquid mixture.
3. Add the all-purpose flour, bread flour and baking powder. Mix until a sticky but homogeneous dough forms.
4. Cover the bowl with plastic wrap and place it in the refrigerator to firm up for about 30 minutes.
5. Shape the dough into balls of about 15 g each by rolling small portions of dough between your hands.
6. Place some powdered sugar in a bowl, add the dough balls and coat them completely with powdered sugar.
7. Place the balls on a baking tray lined with parchment paper, spacing them apart.
8. Bake at 180°C/350°F for about 15 minutes.
