Salmon patties: just a few ingredients and 15 minutes to make!

These salmon patties are flaky, tender and so flavorful with crisp edges and big bites of flaked salmon. They are addictive!
INGREDIENTS
500 g (1 pound) fresh salmon;
¼ cup mayonnaise;
¼ cup panko breadcrumb (more for serving);
2 tbsp red bell pepper, chopped;
¼ cup white onion, chopped;
2 garlic cloves;
salt and pepper to taste;
½ tsp cayenne pepper;
½ tsp fish spice seasoning.
METHOD
- Remove skin and bones from the fish fillet. Use a sharp knife to chop salmon finely.
- Sauté onion and bell pepper with some olive oil until cooked through.
- Add sautéed vegetable into minced fish, season with salt, pepper, garlic, cayenne and fish spice blend (like Old bay, etc.). Add breadcrumb and mayonnaise, then stir to combine.
- Form 6 even patties, cover in panko breadcrumbs and cook each one with some vegetable oil for 4-6 minutes (around 2-3 minutes per side).
