Salmon patties: just a few ingredients and 15 minutes to make!

These salmon patties are flaky, tender and so flavorful with crisp edges and big bites of flaked salmon. They are addictive!
 
INGREDIENTS
 500 g (1 pound) fresh salmon;
 ¼ cup mayonnaise;
 ¼ cup panko breadcrumb (more for serving);
 2 tbsp red bell pepper, chopped;
 ¼ cup white onion, chopped;
 2 garlic cloves;
 salt and pepper to taste;
 ½ tsp cayenne pepper;
 ½ tsp fish spice seasoning.
 
METHOD
  1.  Remove skin and bones from the fish fillet. Use a sharp knife to chop salmon finely.
  2.  Sauté onion and bell pepper with some olive oil until cooked through.
  3.  Add sautéed vegetable into minced fish, season with salt, pepper, garlic, cayenne and fish spice blend (like Old bay, etc.). Add breadcrumb and mayonnaise, then stir to combine.
  4.  Form 6 even patties, cover in panko breadcrumbs and cook each one with some vegetable oil for 4-6 minutes (around 2-3 minutes per side).
