Dried fruit cake: the moist and fluffy dessert

Ingredients:
230 gr flour
1 tsp mixed spice
1 tsp cinnamon powder
1 tsp baking powder
1/2 tsp salt
3 eggs
1 tsp vanilla extract
100 gr brown sugar
3 tbsp of mollasses
220 gr butter
600 gr dried fruit
Zest of 1 lemon
Zest of orange
180 ml water
Directions:
In a pot mix butter, mollasses, brown sugar, dried fruits and water. Heat and mix.
Mix flour with lemon and orange zest, cinnamon, baking powder, salt and spices. Beat the eggs and add in the flour. Add also the dried fruit mixture and spread the batter in a mold.
Bake at 320 F (160°) for 75-90 minutes.
