Mango tiramisu: light, fresh and creamy tropical delight!

Mangomisu is a tropical twist of the original tiramisu: a simply delectable and delicious summer dessert!
INGREDIENTS

400 g (14 oz) cream cheese;
1 ½ cup full-fat cream;
2/3 cup powdered sugar;
1 medium mango, peeled and cubed;
1 cup mango juice;
½ cup hot water;
30 g (1 oz) gelatin;
300 g (10 oz) ladyfingers.
METHOD

METHOD
Whip cream until stiff peaks form.
Beat sugar and cream cheese with mixer until smooth. Fold in whipped cream and add mango slices.
Deep each ladyfinger in mango juice for just a second and then transfer into a 20 cm (8 inch) round mold, covering the side and the bottom of it.
Fill cookie lined pan with cream mixture and smooth out the surface. Let sit in fridge for 10 minutes
Sprinkle gelatin over hot water and set aside for a couple minutes. Whisk until no gelatin crystals left and add mango juice in.
Pour gelatin mixture over the cake and leave in fridge until set completely.
Optionally: decorate with whipped cream and mint leaves before serving.
